Happy Meatless Monday everyone! The Meatless Monday Project aims to promote vegetarian habits, implemented weekly. Going meatless once a week can provide exponential benefits to your health and your carbon footprint! We are celebrating this Meatless Monday with a a few super simple, yummy, end of summer recipes. Crisp Cabbage Apple Salad


3 c organic savoy cabbage

2 organic apples

3 large organic carrots

1/3 c organic raisins


organic goat cheeseSONY DSC


1 Tbs organic olive oil

2 Tbs organic unfiltered apple cider vinegar

Salt + Pepper to taste


1. Chop cabbage and apples into similar, bite-sized pieces. Shave carrots and combine ingredients together in large mixing bowl.

2. Add raisins and combine. Dress salad, toss and serve! It’s that easy!


Oven-Roasted Zucchini Fries


3 organic medium zucchinis

2 Tbs organic olive oil

Salt + Pepper to taste


Dipping Sauce:

3 Tbs organic plain greek yogurt

Juice of half a lemon

Optional: 1/4 tsp Paprika


1. Begin by slicing each zucchini into approximately six fries each.Then coat each piece in olive oil, salt and pepper for flavor and to ensure that none stick to the baking sheet. Bake at 375 degrees for about 40 minutes or until all are crisp and brown.

2. Combine yogurt and paprika. Add salt, lemon and lemon zest to taste. Stir and serve once fries are slightly cooled!
